These green beans are a perfect, simple side to almost any entree. I developed this recipe using just a few key ingredients, and a few tweaks over time. Great for any night of the week!
Green Beans
Shallots, garlic, and a splash of lemon juice give these green beans a bright, well-rounded flavor.
Ingredients
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 3 shallots, finely chopped or minced
- 1 qt green beans, stems removed
- ¼ tsp red pepper flakes
- 1 tsp salt, pepper, garlic (adjust measurements to suit your tastes)
- 1 tbsp lemon juice
- ¼ c chicken broth (substitute vegetable broth for vegetarian version)
- 1 tbsp butter
Instructions
- Heat a pan over medium heat, add olive oil. When the olive oil slides easily over the pan, add garlic and shallots. Lightly salt, and stir often to keep things moving in the pan.
- When shallots are translucent (1-2 minutes), add green beans. Season with red pepper flakes and about 1tsp each of salt, pepper, and garlic powder. Stir.
- Add lemon juice, and continue to stir occasionally. About 3-5 minutes in, deglaze with your chicken broth. Scrape up all the brown bits and add butter, while continuing to cook and stir the green bean mixture until fully cooked. You'll know the green beans are done when they're fork-tender.
- Add salt and pepper if needed, and serve alongside your main entree!
