This creamy, flavorful polenta is a great side dish for roasted chicken and vegetables. It’s easy, and low maintenance, but produces a pretty elevated dinner. No one would ever guess it’s this simple! This recipe will result in 2-3 large servings, and up to 4 smaller servings. Feel free to double the recipe, if you’re feeding more than 2-3 people, and you’d like a more substantial serving of polenta.
5 Minute Parmesan Polenta
Quick and easy recipe, for the perfect creamy, cheesy side dish.

Ingredients
- 1 c Dell'alpe Instant Polenta (or similar instant polenta brand)
- Water, as directed on polenta packaging
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter, unsalted
- 3 tbsp parmesan cheese (freshly grated, or powder version)
Instructions
- Cook polenta according to package instructions. Be sure to slowly add polenta into boiling water, while whisking, in order to avoid any lumps. Stir continuously.
- Once polenta has finished cooking (about 5 min), add butter, salt, pepper, and parmesan cheese. Whisk until all ingredients are fully incorporated, and serve!
